How to Make Australian Battered Potatoes

Recently, I took a trip to the land of my heritage, Australia, And I couldn’t leave without bringing back one or two little nuggets of info for you ninjas. So, I decided to get the recipe for one of the land down under’s er… delicacies.
What you’ll need:
- A few Large Potatoes
- 2 Cups of Flour (Self Raising)
- Extra Flour for Coating
- 1 Tsp of Salt
- 1/4 Tsp of Pepper
- 1 3/4 Cups of Water
- Oil for Deep Frying
Instructions:
- Peel and cut the potatoes into slices of about 1/6th of an inch. Dry Well.
- Sift the Salt and Pepper and flour into a bowl. Make an Indentation in the middle and gradually add water. Mix it into a thick batter and beat it free of lumps.
- Put a thin coating of flower on each piece and dip them into the prepared batter. Let the excess batter drip off before the next step.
- Heat the oil and begin frying a few pieces at a time. Remove them when they are a light golden color.
- Drain them on absorbent paper towels and increase the heat of the fryer slightly.
- Re-Fry the potatoes until they are a rich golden brown color.
- Sprinkle them with salt and enjoy!
Tip: The Battered Potatoes are normally enjoyed with Ranch Sauce in Australia.
