Ingredients:

  • 1/2 cups of onion, chopped
  • 1/2 cups of celery, chopped
  • 1/c cups of carrots, chopped
  • 1 clove garlic, minced
  • 1/4 t thyme
  • 3/4 t basil
  • 1/4 t oregano
  • 1 cup of cabbage, chopped
  • 11/2 cups of garbanzo beans (canned, organic)
  • 2 cups of red kidney beans (canned, organic)
  • 1 can organic Italian tomatoes, chopped
  • 6-8 cups of of Homemade Vegetable Broth

Instructions:

  1. Sauté in 1/4 cup of of broth: onion, celery, carrots, and garlic until onion is tender.
  2. Add remaining ingredients and simmer for about 20 minutes.
    • Start with 6 cups of broth, and add more if needed.

Helpful Hints:

  • Sauté means to be cooked or browned in a pan containing a small quantity of butter, oil, or other fat.

    Cool recipe. This is why those people in that meditarranean village easily lived to be 100, a simple diet of minestrone and some bread on a daily basis.
